At the end of the interview I heard you mention that you were thinking about hacking one of the old serial Mac keyboards to make it work as a USB keyboard. FYI I did something similar to this a couple of years ago. I didn't modify the keyboard, though. Instead I made a separate adapter board which translates the old serial protocol to USB. You might want to try doing something similar by adapting your Arduino hardware/software. I bet it would be easier than opening up the keyboard. The serial protocol is pretty straightforward. I have some documentation and sourcecode on my website. I think I also saved copies of the scans of the old reference manuals which explain the protocol, so if you can't find them online, e-mail me and I will see if I can find them on one of my old hard drives.
