All the stuff in the craigslist add is free and was wondering what would be the best one for me, a retro mac gamer.

If it's neither, then I would get the Classic. That is based solely on specs, and assuming that all three are in good working order. The Classic will have both an internal HD and a 1.4 MB Floppy drive.
If the SE is an FDHD or Superdrive, I would get that since those models DO have the 1.4 MB floppy drive. I would opt for the SE over the Classic in that circumstance, since I believe that the SE's do NOT have those pesky electrolytic (tin can) capacitors that leak and cause the Mac to not work. That's not a guarantee that it will work or work forever, but it's one less (common) problem to worry about.
The Plus has no internal HD, and only an 800k floppy drive, and does not have ADB, so your keyboard and mouse options are much more limited.
Other than that they all basically have the same capabilities.

"Mac Plus + keyboard + HD + mouse (all old-style connections like a phone-jack)
external HD may need initializing because I connected it to a newer "PPC/OS8-9" computer and it may not start up again due to the newer computer language may have disabled something.
Perhaps needs a boot disk? Set up with System 6, I think earlier than 6.4, maybe even 6.1"
Is it fixiable?

I agree. You can always squeeze in an extra Mac or two. Trust me -- look at the photos from my house.

Besides... James is right... you can ALWAYS squeeze in an extra Mac or two... or seventy. :D

[edit] OKOKOK, less flippant: I would at least get a Classic since you can boot it from ROM. Look ma, no floppies! Great for some (but far from all) rescue work. You're going to need something to boot that Plus and SE you're getting... ;)

The plus has no fan ventilation, and no internal scsi port. is pron to many heat related failures
The classic was a machine that was made cutting major costs in mind.
Macintosh SE was, a Compact Mac that Finally was built right, with good quality in mind.

Even though the classic is the only mac with the option to boot Mac OS 6.0.3 directly from ROM
(Command-Option-X-O) i feel they went cheap on parts to save money.
