The most important thing - try to do the things you like, it can be game, animation or any fun things you like. You are not learning programming, you are trying to write a game. If you do what you like, then things will be a lot simpler.
I have not read that book, so I can't recommend for now. Just make sure that you have solid programming foundation first before you proceed - it is best that you already know about object oriented programming.
It depends. You can either do it Objective C (I am not a big fan of this) and learn OpenGL ES, or you use JavaScript and wrapped it in WebKit. I recommend "Beginning iPhone Development".
